Not only did I nail proportioning this burrito to close into the perfect roll, but the fillings were so packed with flavor and variety it's worthy of being called a work of food art. Refried beans, red rice, fried corn, lots of fresh veg, an avocado salsa and a sprinkle of vegan cheeze. Not the prettiest, but real food isn't always pretty. Frozen bananas, little coconut sugar, little chocolate syrup (I'm not perfect) and a big handful of spinach. The spinach does change the taste, but it's slight and doesn't taste like spinach, just tastes "healthy." My first ever noodle bowl, for sure not the last. This was simple, delicious and soooo healthy. There's rice noodles on the bottom, then lots of raw veggies, last covered it all with boiling hot miso/veggie broth. Breakfast was simple and yummy. Sunflower Seed bread from Serious Bread Bakery filled with local tomatoes and lettuce (with vegan mayo, can't be perfect). The swelling in my mouth has gone down a little, so I tried eating toast. Blueberries I picked this morning from Blueberry Heaven U-Pick farm. A whole gallon for only $10. It was so peaceful and meditative out by myself surrounded by huge blueberry bushes (more like small trees) the only sound was birds singing and the breeze whistling through the bushes. I seen lots of butterflies and a birds nest in the middle of one of the blueberry bushes. Chickpea salad made with Jada Chicken Salt. This creamy vegan version has a chicken flavor without harming any chickens. I cooked two cups of dried chickpeas, (I removed the "skins"). Then drain and rinse when done. processed one cup of chickpeas, 1/2 cup vegan mayo, chicken salt to taste, I think I used couple tsps, and about tbsp of water in a mini food processor until it was creamy. In a big bowl I smashed some of the drained chickpeas then added to it the chickpea mayo creamy goodness with couple cups of grapes cut in half, a medium onion chopped, 3 med stalks celery chopped, and 1 cup sliced almonds. Do not use any salt at all except for the chicken salt or it will be to salty. Very satisfying dinner I packed to work last night. Salad with vegan ranch and chickpea salad to pile on top. Orange bell chunks and cucumber coins that I dipped in dressed up vegan cream cheeze (forgot to snap a pic of it). Vegan or not it is so easy to grab junk. I've got extra weight I need to shed that I added on last couple months at my old job (extreme stress). I'm in such a good place I have absolutely no excuses. I'm not perfect and don't want to be, I want to be healthy, happy, full of energy, and enjoying life. Healthy snack tip: swap chips for thinly sliced cucumber. It pairs wonderful with both salsa and guacamole. After I snapped this picture, I took a small piece of plastic wrap and pushed it directly on the guac.
