This is one of my favorite recipes for a delicious treat. Although they are raw “twix” bars I felt like my adjustments to the original recipe left them tasting more like raw snickers.. But who cares right?? Snickers are amazing!
1/4 cup raw agave (you can use honey or maple syrup)
1/4 teaspoon of vanilla extract
100grams medjool dates (pitted and soaked over night or min an hour)
2-4 tablespoons of nut or seed butter (i used peanut butter and i like to add 4 tablespoons because i love snickers, but 2 tablespoons will leave you with a more caramel flavor. Play around with it see what you like best.)
1 block of 85% dark chocolate or make your own if you want to be 100% raw. (Recipe Below) The small amount per bar wasn't a big deal to me so i just use lindt or any good brand from the health food store.
1. Line a baking tray with parchment paper
2. Add macadamia nuts to your food processor and pulse until ground. Add the agave and vanilla and mix it in until combined.
3. Scoop our heaped tablespoons of the mixture and form a rectangle shape on the parchment paper. I don't worry too much about my shape just as long as it is somewhat flat for when you add the caramel on top. Repeat until you have used all of the mixture. You should have 9-12 bases depending how big they were. Place it in the freezer while you make the caramel.
4. Drain the dates and add them to the food processor bowl along with the nut butter. Process until smooth. If you need to add a little bit of water go for it. I find i use a tablespoon or so depending how long my dates have soaked.
5. Take the twix bases out of the freezer and top it with the caramel filling. Put it back in the freezer for about an hour or overnight.
6. Melt the chocolate in a double boiler. Remove it from the heat and dip eat frozen twix bar into the chocolate to coat it. The chocolate will harden pretty quickly. Repeat until all your twix are covered.
7. Place it back in the freezer and allow it to set.

***To make your own chocolate:
8 tbsp coconut oil melted
10 tbsp raw cocoa powder
4 tbsp agave
