I don't know what tropes are popular because I don't really seek this stuff out. But I do know sickfics are popular and characters being abducted or tortured are popular.

I feel like sensory deprivation is seriously underrated? I have only seen it maybe twice? The blind soul reaper (to begin with, hw turns into a more complicated hybrid later) Tousen Kaname in BLEACH's zanpakutou (a sword born of his soul... unless that was actually somehow his dead friend's, because that panel caused some confusion), Suzumushi (Bell Cricket)'s Bankai traps opponents in a black dome where all their senses (sight, sound, smell... and their ability to sense spiritual pressure) are nullified, except touch. It has the potential, we just happen to see it used on a combat sadomasochist, so... xD;;

I genuinely do not read fanfics much at all, so sadly, I have no recommendations in that regard.

Instead, I'll leave you with my favourite torture scene! Mr. Blonde from Reservoir Dogs torturing a cop for fun... to some 70's songs he likes. Also dancing a little!

(It's one of my character writing inspirations for roleplaying Buson when he's torturing people. :D Do I get to write him torturing people a lot? Nah... but it's there, under the surface.)
