Healthy Turkey Chili

Ingredients:
1 1/8 tsp olive oil
3/4 onion, chopped
1 1/2 garlic cloves, chopped
3/4 red pepper, chopped
6 tbsp. chopped celery
3/4 jalapeno pepper, seeded and diced
1.5 tbsp. canned chipotle pepper in adobo, diced
3/4 lbs. 99% lean ground turkey
1 tbsp. + 1/2 tsp chili powder
3/4 tsp oregano
3/4 tsp ground cumin
3/4 bay leaf
10 1/2 oz. canned diced tomatoes (not drained)
1 cup + 2 tbsp. low sodium chicken broth
Salt and pepper
10 1/2 oz. canned kidney beans, rinsed and drained
Directions:
Over medium-high heat, warm the olive oil. Combine the onion, garlic, red pepper, celery, and jalapeno in a large mixing bowl. Cook for 5-8 minutes, or until onions start to turn translucent.
In a large mixing bowl, combine the turkey, cumin, oregano, bay leaf, and chili powder. Cook, breaking up the turkey as it cooks, for 6-8 minutes, or until it is brown.
Combine the tomatoes and chicken broth in a large mixing bowl. Cook it for 10 minutes at a low temperature.
Simmer for another 10 minutes after adding the beans.
Serve with lime juice, baked tortilla chips, sour cream/Greek yogurt, avocado, cilantro, or cheese on the hand.
