Is that the ink demon talking to him or is it his own thoughts? And if it is the ink demon, Why is the scribble/text red?

Yes! When those dark bubbles are used with white texts, it does represent the Ink Demon talking! (Images below for example) vvvv

The reason the dialogue isn’t shown is because we aren’t necessarily in Bendy’s HEAD, rather just spectating him. In moments that we are in Bendy’s POV, or his thoughts, Ink Demon’s dialogue will show. (Again images below for example, image 1 we are in Bendy’s head (a flashback), and image 2 we are merely spectating.)

And in the moments where the text is RED, it is suggesting that the Ink Demon is being more ASSERTIVE and keen on what he’s saying, whether it be a serious warning, expressing an intense emotion, etc. :DDD

Thanks for the question, and I hope it clears up a bit of confusion and makes it a bit more fun to notice when Ink Demon chooses to show up and his behavior! ^^
