Official goodbye to Tumblr blogging, and hello to the start of my own website.
Hey Y’all! Long time no post.
I am back and A LOT has changed. I have finished my graduate school and dietetics internship (Hallelujah!), I have moved, married, am now an aunt of two kiddos, traveled to Colorado, AND now have my OWN kitchen to cook in and organize. I am about to start my career as a dietitian and want to better reach out to people who want to listen. Now that I am more free with my time (I am no longer a full-time graduate student and intern planning a wedding, moving, and decorating a house), I will be blogging more regularly. Promise :)
Current obsessions: Labeling everything and The Pioneer Woman.
Just Peachy cupcakes
For Mother’s Day and my (soon to be) sister-in-law’s birthday!
... So she did!
Oatmeal Carrot (Cake) Cookies-- This is the gift you give to dietitians to say ‘Thanks’
Maybe someone out there understands how excited I am to get my hands on Chrissy Teigen’s cookbook: Cravings?!
Roasted romaine, why have I never tried you before?
I love roasted vegetables from broccoli to sweet potatoes. Roasting just adds so much flavor and makes the vegetable more palatable and easier to digest. ”Keep reading” to recreate it for yourself!
Sweet tomato, basil olive oil, chickpeas... You know it tastes delicious!
I attended the state conference for the dietetics academy this year. I spent two days talking about and doing what I love, and it was awesome! I am so happy to be in the profession I am and can't wait to change lives with my knowledge and passion for the field.
Because we escaped school (for a 2 day state dietetics conference, but still) 🙌😄 #WVAND #DieteticsGals
I don’t know about y’all, but I love a smoothie that is thick, full of flavor, packed with nutrients, and low in added sugar. That is just what I created today.
Today I grabbed my blender and threw in:
Voilá. Breakfast bars.
I love preparing breakfast. It’s the commonly forgotten meal, but it honestly is so important to eat. I made this recipe that ensured having all nutrients needed to start the day, and they were ready in 25 minutes total.
Oh, baby baby!
My littlest love turned 1 this week! Being a babysitter for multiple kids, I love to make special treats for their birthdays. The infants and toddlers can be a little tricky because I really don't like to load them up on sugar. These Baby Banana 'n Pear Muffins are made with baby food, low in sugar, and high in nutrients for their little bodies to grow! Don’t have a baby? Well, pureed baby food is a great way to replace fats in a baked good. Check it out:
Valentine’s Day is right around the corner and today I made my goodies to give all of my loved ones! I donut care how old I am, I will always be excited for Valentine’s Day and use it as a day to spread even more love than usual. However, I am not a fan of buying a bunch of things to show love.
Now you have no excuse to skip breakfast: Breakfast in a Cookie!
I picked up the Taste of South Magazine, of course the Special Issue: Fall Baking one. I found some amazing recipes inside. This is their Apple-Spice Bundt Cake. I had to make them miniature bundt cakes, and I adapted the recipe to make them a little healthier. The smell of fall is an added bonus to this delicious recipe!
