how to make the spring roll paper
▫ 1.5 cup white flour ▫ .5 tsp salt ▫ 1 tsp oil ▫ 1-2 tsp of water (enough to make a dough) ▫ knead the dough and let it sit for 30 minutes under a damp cloth ▫ make the dough into little balls (we made 20) and roll into thin circles ▫ mix a little white flour and water in a small bowl to make a paste (our glue !!) ▫ stuff with vegetables etc. (carrots, peppers, ginger, sprouts, vermicelli noodles) ▫ wrap the roll using the white flour paste to ensure the rolls don’t break/unravel ▫ fry the rolls in oil (we used peanut oil) until they’re brown
how to make the chili sauce
▫ .5 cup sugar ▫ preferred amount of salt ▫ tamarind paste (or if you want, vinegar but it’s so good with tamarind paste !) ▫ chili flakes ▫ cornflour paste (cornflour and water mixed to a paste) ▫ first put the sugar, chili flakes, salt, tamarind paste into a pan and let it melt ▫ then add the cornflour paste and stir to prevent sugar from sticking ▫ allow the sauce to completely boil (bubble all over)
