Ramen. Takashi. Meat!
Trader Joe's had massive eggplants on Sunday so I really wanted to make some eggplant parmigiana. I found this recipe and followed it almost exactly (which is weird for me) only substituting Ian's Italian Panko vs. the whole wheat, TJ's Bolognese for marinara, and in the interest of complete disclosure - I haven't owned Pam since 2005, so I just lightly greased parchment paper with a stick of butter. It was remarkably simple and crispy and delicious. Some of the best eggplant I think I have ever prepared!
While the eggplant was in the oven I cooked up some quick pasta with Trader Joe's dried egg pappardelle and a jar of bolognese. I've never tried either before, but the pasta selection at my local TJ's was slim pickings. The pappardelle was perfect after 9 minutes in boiling water and the bolognese was good... but not meaty at all. It was a fine sauce for a side of pasta, but I wouldn't buy it again for a main dish.
I also made a salad of spinach, arugula, red onion, dried cranberries, goat cheese, pepperoncinis, spiced pecans, olive oil and balsamic vinegar. One of my favorite appetizers for Italian meals is Trader Joe’s Ciliegine Fresh Mozzarella stuffed in Trader Joe's Hot & Sweet Cherry Peppers.
This is probably one of my best planned meals, everything was ready to be plated at the same time, hot and delicioso!
I made guacamole with feta cheese in it.
Caviar and bubbly for the Breaking Bad finale... bitch.
