Note from Anon: I have a serious wheat allergy, and following a 100% wheat-free diet is very frustrating for me, and a lot of people say it's their worst nightmare. But I might actually feel more frustrated if I had to cut out soy because it's so common in prepared foods, or fish because it's a staple protein in my culture, etc. Which made me wonder how most people think of it.

as someone who is severely gluten and lactose intolerant, if i had to pick one to be able to eat again, it would be wheat. And i used to eat cheddar by the BLOCK. A majority of convenience food and cheap food has wheat as an ingredient. Gluten-free versions of things like bread and pasta tend to be significantly more expensive than their counterparts. Even canned soups tend to be thickened with flour. It drives my grocery bill up and limits the food i can quickly and cheaply eat when i'm low energy.
I can take lactaid pills for dairy but there's literally nothing I can take that would keep me from getting sick if I ate something with gluten in it.
