Erika Jo's Mediterranean Inspired Hot Mess
Consumed after run, last meal of the day, 5th meal. Took 5 minutes to prep and 5 minutes to cook. My picture isn't that great because I was hungry and took it quickly!

Ingredients
5 Sticks of Asparagus
3/4 Cup of Spinach
1 3/4 Chili Lime Chicken from Trader Joe's (Cut in pieces)
1 Tablespoon Olive Oil
1/2 Kumato Brown Tomato (diced)
1 oz Greek Sheep Goat Feta
2/3 oz of Sun Dried Tomatoes
1 Teaspoon Chopped Garlic
Lemon Juice
Instructions
Heat pan with olive oil. Add asparagus and garlic and put cover on pan. Heat for 2 minutes. Add chicken, spinach, and Kumato heat for 2-3 minutes until chicken is warm. Serve on plate then crumble feta cheese and sun dried tomatoes on top. Squeeze lemon to taste.

1/3 cup spinach
3 oz Chili Lime Grilled Chicken (picture doesn't show chicken on top but put it on there!)
1 Ezekiel Sprouted Grain Tortilla
1 Slice of Avocado
Lemon Juice
Instructions
After heating tortilla and chicken to your liking, take avocado slice and with a fork mash it on the tortilla. Then place spinach, Kumato tomato, and chicken on top. Squeeze lemon juice on top to taste.

My most favorite foods in the whole wide world.
I was randomly thinking about food and how amazing some of it is. I have compiled a list of some of the best things I have ever ate in my life!
Amorino in Paris, France has the best gelato (even better than Italy). I had a scoop their Fig & Cream and Pistachio. Absolutely to die for.
Madeline Bistro in Tarzana, CA has the best Vegan food (one of the best meals I have ever ate in my life). Beet Tartare, Big Mac, Caesar salad, chocolate shake, and a chocolate brulee for dessert.
Augustiner Braustubl in Salzburg, Austria had amazing beer (my favorite was the radler) and deli type stuff that you pay by weight. I remember having this chopped ham in lightly spiced mayonnaise that I ate with bread. It was amazing. And the potato salad? We ate there twice on our trip.
Cafe du Monde in New Orleans, LA best beignets and caffe au lait.
Random restaurant in Mykonos, Greece best Greek Yogurt with honey and walnuts. I've been told the yogurt is just amazing in all of Greece.
