From Almonds to Almond Milk
Just because #vanlife may take a road away from the supermarkets and health food stores doesn’t mean having to go without Almond milk. If you have never made it before its super simple.
Take a cup of raw almonds, preferably organic and in a glass jar, add enough water to cover them. Put a lid on and leave in the refrigerator for 24 hours. After 24 hours take the Almonds out of the refrigerator and drain.
Add he drained almonds to a blender with 2 cups of fresh water and blend on high for about two minutes until you have a nice creamy mixture.
Strain the mixture through a fine mesh cloth int a bowl. You can buy a “nut bag” specifically for the purpose (check out elliesbest.com for nutbags) but a fine muslim towel or even a fine sieve will work just as well. You now have a bowl of home made nut milk. At this point you can add flavor or sweetener if you desire (Vanilla, honey etc) and then decant it into a small bottle for storage in the fridge. It will keep three to four days in the fridge.
So, enjoy a little fresh, home made Almond milk on the road. Please remember to thank the bees for our Almonds. In the spring over two million bee hives are moved across the country to the California almond groves where the bees work for six weeks to pollinate the almonds trees so we can enjoy the nuts and the milk.
