#iirc this is likely because the proteins and fat in the chocolate split #to avoid this if you sre using chocolate ina recipe you need to melt the chocolate over a waterbath while the water is simmering #a metal bowl ovet a pot filled with an inch or two of water #the heat from the steam melts the chocolate without getting it too hot #if the fat splits you can usr an immersion blender to try and save it #its similar to how cheese splits when it gets too hot #anything made with milk is like a horse. it will try to kill itself #forgive my typos.......#i taught a brownie baking class and had a similar outcome with the kids' brownies.#i had to modify the recipe after asking my culinary arts teacher how to fix or avoid the problem #the main problem is heat. low and slow always
