Simple dinner tonight: sheet pan chicken tikka. It would have been a hell of a lot simpler if I’d actually followed the recipe but the whole chicken was a lot cheaper than just thighs so I bought it and broke it down myself so I could make a double recipe. Glad I did, Frankie was STARVING—he ate two drumsticks and a thigh which I’ve never seen him do. We have the two breast pieces left (the back and wings are in the freezer so I can make soup from them later) for dinner tomorrow along with some of the vegetables. Maybe I’ll make rice pudding to round it out.
