For any of you who have been to the #westsidemarket in Cleveland, odds are you've seen or enjoyed the crêpes there. Not only are they delicious, bit it's mesmerizing to watch them be made. When I went to make scrambled eggs this morning, I decided against that method and instead used the method I'd seen used with the crêpes. Here's the final result: paper-thin layers of egg folded on top of one another, with brie, sundried tomatoes, basil and parsley. I also had vegetarian breakfast sausage but it's hardly with noting in comparison to the amount of flavor and textures that popped with the eggs. This is what two eggs looks like made this way.
