African Peanut Stew
This is yet another Sweetpea staple, African Peanut Stew. This was such a hot seller since it was not only delicious but vegan and gluten free which appealed to a lot of customers. I typed up this recipe for a redditor so I figured I’d add it here as well. For the record I have made this in the Instant Pot and it came out awesome. African Peanut Stew
Serves: 6
Time: 55-1 hr
1 tsp. Olive oil
1 medium sweet onion, diced
3 cloves garlic, minced
1 red bell pepper, diced
1 jalapeno, seeded and diced
1 medium sweet potato, peeled and chopped into ½ in pieces
1 28 oz can diced tomatoes and their juices
Salt/pepper, to taste
1/3 natural peanut butter
4 c. vegetable broth
1 ½ tsp. chili powder
¼ tsp. cayenne pepper
1 15 oz canned chickpeas, drained and rinsed
1 handful of spinach or destemmed kale
Fresh Cilantro, garnish
Roasted Peanuts, garnish
In a large saucepot (or crock pot or Instant pot) heat oil over medium heat. Add onion and garlic and sauté for about 5 minutes or until fragrant.
Add bell pepper, jalapeno, sweet potato and canned tomatoes. Over med-high heat simmer for an additional 5 minutes. Season vegetables with salt and pepper.
In a medium bowl, combine together peanut butter and 1 c. of vegetable stock until smooth. Stir the mixture into the vegetables with remaining 3 c. broth, chili powder, cayenne.
Cover the pan and turn heat to medium-low. Simmer for 10-20 minutes or until sweet potatoes are tender and cooked.
Add the chickpeas and spinach and cook until spinach has wilted. Season with salt and pepper.
Serve and enjoy with cilantro and peanut garnish.
