ALMOST RAW WHITE CHOCOLATE BITES
Vegetarian, dairy free, gluten free, vegan, and almost raw doesn't have to be boring or bland. To balance out my cake and cheese eating ways with some healthy goods for my body. This is the ying to my yang. Recipe adapted from foodfaithfitness.com
RECIPE Ingredients: 1 can (13 ounce) chickpeas, drained and rinsed 2 tablespoons olive oil ½ teaspoon smoked paprika ¼ teaspoon cayenne pepper Salt and pepper to taste 2 large ripe avocados, halved and seeded ½ cup cucumber, diced ½ cup tomato, diced ¼ cup red onion, peeled and diced 2 tablespoons fresh lemon juice (about 1 large lemon) 1 teaspoons tahini 1 handful cilantro leaves, rinsed and chopped Ingredients: 1. Preheat oven to 400 degrees F. 2. After rinsing the chickpeas, try to peel off as much excess peel as possible. Then coat them in 1 tablespoon of olive oil, cayenne pepper, smoked paprika. Place in a baking sheet and bake for 10 minutes. Remove from the oven, drizzle with 1 tablespoon of olive oil and bake for another 10 minutes. Set aside and allow to cool. 3. In a medium bowl, mix tomatoes, cucumbers, onions, and lemon juice. Add in salt and pepper to taste. Mix in about 1/3 cup of the baked chickpeas. 4. Scoop out the center of the avocados with a spoon so that you have a large, deep hole. Coat the avocados with a bit of lemon juice. Scoop spoonfuls of chickpea mixture into the center of the avocados. Drizzle with tahini, garnish with cilantro and serve. You will have left over chickpeas, enjoy them for a snack later.
LEFTOVER SALAD
-3 small to medium potatoes -125 gr. Iceberg lettuce -70 gr. spinach (raw) -140 gr. cucumber -80 gr. cherry tomatoes -20 gr. red onion -70 gr. aspargus -14 gr. sunflowerseeds >> Chop the lettuce, spinach, tomatoes, onion, aspargus, cucumber and add to a big bowl. Boil the potatoes, when done, cut intotiny pieces and add to the salad. Sprinkle some garlic powder, paprika power and sunflower seeds all over and done! it’s easy, it’s tasty!
