Had a taste for chilaquiles and had 4 of the 12 ingredients, so I ran downstairs to grab the rest. Supped then up to make Super Chilaquiles with two eggs cooked in a base of beef chorizo, black beans, cheese (I used TJ’s unexpected white cheddar because I had it on hand), a base from leftover eggs in Hell instead of red enchilada sauce, adobo peppers, and spooned atop white corn restaurant tortilla chips, topped with fresh cilantro, Greek yogurt, avocado, and lime. Neither of us could finish a whole plate but I’m hyped for leftover breakfast tomorrow!
