Strawberry Rose Amaretti Cookies

We had friends staying last night so we made some nice food including these amaretti (made because one of our friends is gluten free.) They were so good - crisp on the outside and soft and chewy on the inside (the biscuits that is, not the friends!) We served them with roasted peaches and vanilla ice cream.

I used this recipe, but I only had 200g of ground almonds in the house so I scaled down the other ingredients to fit with that

Amaretti are small and perfectly formed. These are great with coffee or as an after dinner treat.

I made amaretti for the first time today! They're very good!

This is using the King Arthur Baking recipe. Honestly this was way easier than I expected—I'm still a little terrified of dessert baking but this was pleasant and not especially stressful.
