When I first went to Italy in 2014 , I was newly married , naive and a novice to Italian cuisine! I made the cardinal mistake of ordering “ pasta with white sauce “ at dinner one day . Signor Antonio gave me a earful and a crash course .. So there are red sauces, white sauces and a green sauce . Let’s start with the uncommon green sauce — Pesto : pesto is made from basil leaves , garlic , crushed pine nuts , coarse salt , cheese and olive oil . The richest and creamiest of them all are the white sauces : ⚪️Alfredo : the commonest , made with heavy cream , garlic and Parmesan cheese . 🟡Carbonara : eggs are the unsung heroes in this sauce , made more silky by adding cheese and pork and garnished with black pepper ⚪️🟢Aglio e olio : simple sauce made with garlic , olive oil and chilly flakes Now the final red sauces : . 🔴Marinara : tomatoes , garlic , herbs , onions , olives . 🔴🟠Arrabbiata : a spicy marinara , add crushed chilly . . 🔴🟤Bolognese : the star red sauce , made as a stew of ground meet and tomato . . —— All credit to @ashwinsgirl 💝 . .
