Simon showed that he was ready for death when he spoke to Betty, so Marcy was respecting his wishes. When Betty jumped through the portal, he changed his mind, but traditionally when a vampire is turned, they remain the age they're at forever. It could be that Marcy didn't turn Simon because that'd just be dooming him to an eternity of pain from nearly-being-dead. We haven't seen any other vampires, much less older ones, so we can't say for sure but that's the best I can think of.

I received an early birthday present from animetriplicate. She, like my other friends and roomies, have a sense of humor.
I unwrapped the present and inside was a tea strainer. As you can see, she taped Heero's face on the box. I will have to put the tea in his pants. The box assures me it will be PANTLOADS OF FUN.
