Well first of all I do agree that Luffy would be an incredible defendant (he is pain in the ass). If that one of first cases, I also see Luffy as an "assistant" in next cases because you're dealing with his friends and stuff (he is pain in the ass)

Second, I think there can be a case where Robin is defendant because you know all this Ohara stuff?? I think for this case Sanji would be the witness, but he would insist on Robin's innocence and losing some detail in progress/not saying everything in full because it would bring more stress to Robin if there would be any really suspicious details (you know like a weapon with her fingerprints and etc etc).

I also can see a running gag of Straw Hats being technically criminals but like. in crossover with lawyers. heh.

For dynamics.. well, there is Sanji/Godot j. I think Chopper could get along well with Pearl, and Nami (and maybe Robin) being something of "cool sister" to both Maya and Pearl. I also have a feel that Luffy and Maya share one brain cell (they make Sanji cook for both of them).

I also think Robin could get along well with Miles because they're both traumatized people who was very closed off because of their trauma until they meet their friends and in their later age they became more soft and healed.

And I just thought, I think Sanji could be protective of Pearl and Maya, because well he is protective of someone close to him in general, but I also think they can be something special, because Sanji is more a younger sibling than a older one, and there he have them. Maybe he would want to protect them as a general feeling of "well it's my turn to return the favor". I also think he generally understands a grief for losing someone as older sibling or mother, and he could support them when talking about Mia.
