Ingredients: - 2.5 lbs pork shoulder, cut into chunks. - 2 cups apple cider. - 1 cup chicken broth. - 2 apples, cored and sliced. - 1 onion, chopped. - 3 cloves garlic, minced. - 2 tablespoons olive oil. - 2 teaspoons dried thyme. - 1 teaspoon rosemary. - Salt and pepper, to taste.
Instructions: Set the oven to 325F 163C before you start cooking. Add salt and pepper to the pork shoulder chunks. Slowly heat olive oil in a Dutch oven or other pot that can go in the oven. If you need to, work in batches to brown the pork on all sides. Take it out and set it aside. Put the onions in the same pot and cook them until they get soft. Put in the garlic and cook until it smells good. Pour the chicken broth and apple cider into the pot. Scrape the bottom of the pot to get rid of any browned bits. Put the pork back in the pot after it has been browned. Put in the rosemary, thyme, and apple slices. Once the mixture starts to simmer, cover the pot and put it in an oven that is already hot. Bake the pork for two to five hours, or until it falls apart when you cut it with a fork. You can put the Apple Cider Braised Pork on top of mashed potatoes or bread.
