Karşınızda The World’s 50 Best Restaurants 2018 (Dünya ilk 50 restaurantı) sıralamasında 13. sırada yer alan İspanya da bulunan, ızgara konusunda çok başarılı bir şef Victor Arguinzoniz. İspanya’nın Bask bölgesindeki Bilbao ile San Sebastian şehirleri arasında küçük bir köy ya da kasaba denebilir. Axpe köyünde tüm dünyadan yemek meraklıları ve ünlü şefler dahi bu mekana “Asador Etxebarri” geliyor. Şef Victor her ızgara ya farklı odun kullanmasıyla da ünlü. Meşe, portakal ve elma ağaçlarından kestiği odunları kullanıyor. Izgaralarının bir özelliği de manivela sistemi olması. Video da gördüğünüz üzere manivela kolunu çevirerek ızgarayı ateşe yaklaştırıp uzaklaştırabiliyor (yukarı-aşağı). Böylece yemekleri istediği oranda pişmiş ve sulu bir şekilde sunabiliyor. Şef Victor pişirme felsefesini kendi sitesinde de şöyle tanımlıyor: “Yeryüzü, okyanus veya ateş.. O sezon hangi ürünler en taze olanıysa o gün menü ona göre karar verilir. Driving through the Basque country, thinking about nothing, observing the landscape and architecture of this area, slowly making our way to the town of Atxondo where Etxebarri was awaiting our arrival. . Everything was a treat. Every detail had been thought of, the materials, the plates, the font on the menu, even the little rock holding the butter knife had a story. . I enjoyed that day so much. Being with my family, drinking wine, and eating food. What else can you ask for? . ...and then the "Chuleta de vaca" was politely placed on the table. Game over. My sister grabbed the bone and started eating it while questioning if that was the appropriate way to eat it. One of our waiters came and just said "and yes, that's how you eat it". Perfection. .
