Kimchi (Korean: 김치), a staple in Korean cuisine, is a traditional side dish made from salted, fermented vegetables, most commonly napa cabbage, and Korean radishes, with a variety of seasonings, incl. gochugaru (chili powder), scallions, garlic, ginger, and jeotgal (salted seafood). There are hundreds of varieties made with different vegetables. In the past, Kimchi was traditionally stored underground in jars to keep cool during warm months, and remain unfrozen throughout the winter, during which time it was a vital source of vitamins. With the rise of technology, Kimchi refrigerators are more commonly used for storage.

This is an Irish autism organization (I can’t think of a better term right now). As with any organization claiming to support autistic people, I was skeptical at first. But I read through some of the website and it genuinely listens to and supports us! They even acknowledge “high-functioning” as a controversial term and use identity-first language.
