Thai Khao Tom soup for a winter's morning
1/4 kg cauliflower
1/4 kg broccoli
200g rice noodles
4 basil leaves
1/4 finger ginger
3 celery stalks
1 onion
1/2 cup green onion
tablespoon soy sauce
juice of 1 lemon
1 teaspoon salt
2 liter water
1 chilli
Instructions
Wash all the vegetables, boil water in a pot, chop and add the onion, garlic, ginger and celery and simmer
Stir in broccoli and cauliflower
Add the remaining spices and rice noodles,
Cook for 4 minutes and serve, topped with a sprinkle of chopped green onion and chilli.
