This Avocado Egg Salad is a delicious and healthy twist on traditional egg salad. Creamy avocado, protein-packed eggs, and zesty lime juice come together for a satisfying and nutritious meal. It's perfect for sandwiches, wraps, or as a salad topping.
Ingredients: 2 ripe avocados, diced. 4 hard-boiled eggs, chopped. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup mayonnaise. 1 tablespoon lime juice. Salt and pepper to taste.
Instructions: Put the diced avocados and hard-boiled eggs in a large bowl and mix them together. Cut up the red onion and fresh cilantro and add them to the bowl. The mayonnaise and lime juice should be mixed well in a separate small bowl. Cover the avocado and egg mix with the mayo-lime dressing. Toss it all together gently until the dressing covers the salad all over. Add salt and pepper to taste, and taste again if you think it needs more or less. Serve right away or put in the fridge until you're ready to eat.
