Ingredients: 2 English muffins. 4 eggs. 2 slices of cheese. 1 tomato, sliced. Salt and pepper to taste. Butter for frying.
Instructions: Split the English muffins and toast them lightly. In a frying pan, melt some butter over medium heat. Crack the eggs into the pan and cook until the whites are set but the yolks are still runny, about 2-3 minutes. Season eggs with salt and pepper to taste. Assemble the sandwiches by placing a slice of cheese on the bottom half of each English muffin. Top the cheese with a cooked egg and slices of tomato. Place the top half of the English muffin on top to complete the sandwich. Wrap each sandwich in parchment paper or foil for easy transport.
