Ingredients: 6 slices of bacon. 4 slices of bread. 2 eggs. 1/2 cup milk. 1/4 cup maple syrup. 1/4 teaspoon vanilla extract. 1/4 teaspoon ground cinnamon. 1/8 teaspoon salt. 1/8 teaspoon black pepper. 1/4 cup grated cheddar cheese. Cooking spray.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with cupcake liners. In a skillet over medium heat, cook the bacon until it becomes crispy. Remove the bacon from the skillet and drain it on paper towels. Once it cools, crumble it into small pieces. Cut the bread slices into small cubes and set them aside. In a mixing bowl, whisk together the eggs, milk, maple syrup, vanilla extract, ground cinnamon, salt, and black pepper. Add the bread cubes and crumbled bacon to the egg mixture. Gently stir until the bread is evenly coated with the mixture. Let it sit for 5 minutes to allow the bread to absorb the liquid. Fill each cupcake liner with the bread and bacon mixture, pressing it down gently to compact it. Top each cupcake with a sprinkle of grated cheddar cheese. Bake in the preheated oven for 20-25 minutes or until the cupcakes are set and the tops are golden brown. Remove the cupcakes from the oven and let them cool for a few minutes before serving.
