This BLT pasta salad with creamy ranch dressing is a great way to change up the traditional BLT sandwich. It's simple to make and great for potlucks, picnics, or as a side dish for dinner during the week. The tangy ranch dressing adds a delicious flavor that goes well with the crispy bacon, juicy tomatoes, and fresh lettuce. Plus, it's great for lunch the next day when you have some left over.
Ingredients: 8 oz rotini pasta. 1 cup cherry tomatoes, halved. 1 cup crispy bacon, crumbled. 1 cup iceberg lettuce, shredded. 1/2 cup ranch dressing. 1/4 cup mayonnaise. 1/4 cup sour cream. 1/4 cup grated Parmesan cheese. 1 tsp garlic powder. Salt and pepper to taste.
Instructions: Cook the rotini pasta according to package instructions until al dente. Drain and rinse with cold water. Let it cool completely. In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, crumbled crispy bacon, and shredded iceberg lettuce. In a separate bowl, whisk together the ranch dressing, mayonnaise, sour cream, grated Parmesan cheese, and garlic powder until well combined. Season with salt and pepper to taste. Pour the creamy ranch dressing over the pasta mixture and gently toss everything together until evenly coated. Refrigerate the BLT pasta salad for at least 30 minutes before serving to allow the flavors to meld together. Serve chilled and enjoy!
