Ingredients: 4 slices of bacon, chopped. 2 leeks, white and light green parts only, thinly sliced. 3 cloves garlic, minced. 4 cups russet potatoes, peeled and diced. 6 cups chicken or vegetable broth. 1 cup heavy cream. Salt and pepper, to taste. Chopped chives, for garnish.
Instructions: In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside on paper towels to drain. In the same pot, add the sliced leeks and minced garlic. Saut them in the bacon drippings until the leeks are soft and translucent, about 5 minutes. Add the diced potatoes to the pot and stir them with the leeks and garlic for another 2 minutes. Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 20 minutes or until the potatoes are tender. Use an immersion blender to carefully puree the soup until smooth. Alternatively, transfer the mixture to a blender in batches and blend until smooth, then return it to the pot. Stir in the heavy cream and heat the soup over low heat until warmed through. Season with salt and pepper to taste. Serve the creamy bacon potato leek soup hot, garnished with the crispy bacon bits and chopped chives.
