These tasty Baja Fish Tacos are made with warm tortillas, spicy coleslaw, and fresh cilantro. The cod fillets are crispy. Excellent for a tasty and filling meal!
Ingredients: 1 lb cod fillets. 1 cup all-purpose flour. 1 cup beer for the batter. 1 tsp baking powder. 1/2 tsp salt. 1/2 tsp pepper. 1 cup shredded cabbage. 1/2 cup mayonnaise. 2 tbsp lime juice. 1/2 tsp cayenne pepper. 8 small flour tortillas. 1 cup vegetable oil for frying. 1/2 cup chopped fresh cilantro. 1 lime, cut into wedges.
Instructions: In a bowl, whisk together flour, beer, baking powder, salt, and pepper to make the batter. Heat vegetable oil in a deep frying pan over medium-high heat. Dip cod fillets into the batter, allowing excess to drip off, and then fry until golden brown and crispy about 4 minutes per side. In a separate bowl, combine shredded cabbage, mayonnaise, lime juice, and cayenne pepper to make the coleslaw. Warm the tortillas in a dry skillet or microwave. To assemble the tacos, place a piece of fried cod on each tortilla, top with coleslaw, fresh cilantro, and a squeeze of lime juice. Serve immediately and enjoy!
