So yesterday, I decided I would bake a lemon & Poppy seed loaf. Whilst double checking all the ingredients we had I came across the Greek style yogurt that was necessary in the recipe only to find out that it was two weeks out of date; so that blows that idea out the window. Luckily for me I had previously planned to bake two things so I used the next idea which was Banana & Cinnamon Cupcakes/Muffins.
So I started to measure out all the ingredients for my Banana & Cinnamon Cupcakes/Muffins as a first step.
2 cups of self-raising flour (sifted) [tick]
3/4 cup caster sugar [tick]
1 teaspoon of ground cinnamon [tick]
125 g butter, (melted,cooled) [tick, kind of, had to use the small amount of butter that was left, then a lot of margarine.]
2 x 59 g eggs, (beaten) [tick]
1 teaspoon vanilla essence [tick]
1 cup mashed banana [tick]
once I spent a good proportion of the time measuring out all of these, I then went on to put all the mixture in a bowel as it says in the recipe. this recipe I thought was very simple and easy which I find is always the key to a great baked goods. Keep it Simple Silly.
I put all the dry ingredients in a bowel then I added the cinnamon and I roughly mixed them together, once I had done that I then added all the wet ingredients. beaten eggs, milk, vanilla essence, melted butter/ marge, and then the mashed banana. I mixed all theses together till I saw no more dry ingredient in the bowel. I scooped out the mixture into silicon paddy pans (which are the best things I have ever seen) till there were no more mixture left in the mixing bowel.
The next step was to place the paddy pans into a pre-heated oven at 200 degrees for 12-15 minutes. Once done let them to be cool. Whilst I was waiting for my cupcakes/muffins to cool down I was prepping my icing mixture.
Now these are the ingredients you need to make up your icing mixture.
250 g reduce fat-cream cheese [Tick, kind of, I only had 60 g of cream cheese, so I could only ice 4 cupcakes/muffins]
2 tablespoons pure icing sugar [tick]
So I had to make with what I had, which was very minimal. I started icing my cupcakes/muffins once I had finished prepping the ingredients and like I said I could do four which was a real shame; in terms of how they look; but in terms of what they tasted like, I actuality think that they tasted better without the cream cheese topping. I think I really enjoyed the bare-minimal taste and look, it gives it edge.
Side note: next time I bake something, I will take photos of my ingredient set up and photos of my baked goods when completed.
I had a lot of fun baking theses cupcakes/muffins, it did take me nearly the whole day because once I had finished making everything I had to wash up all my dishes and put away everything, sadly that is a part of cooking or baking doing the cleaning up; but at least you get a treat after you wash up all the dirty dishes. If baking takes you the whole day and you’re feeling very run down and tired, that is okay because you get to reward yourself with the tasty food that you have masted at.
