This recipe for oven-fried okra has all the crispy goodness of deep-fried okra without the need for that. You can eat it as a snack or side dish, and it's better for you and vegans.
Ingredients: 1 lb fresh okra, trimmed and sliced into 1/2-inch pieces. 1/2 cup breadcrumbs use gluten-free if needed. 1/4 cup cornmeal. 1/4 cup nutritional yeast. 1 tsp paprika. 1/2 tsp garlic powder. 1/2 tsp onion powder. 1/2 tsp salt. 1/4 tsp black pepper. 1/4 cup unsweetened almond milk or any plant-based milk. 1 tbsp olive oil.
Instructions: Warm the oven up to 425F 220C. Put nutritional yeast, paprika, garlic powder, onion powder, salt, and pepper in a shallow dish. Add the breadcrumbs and mix them all together. Put almond milk and olive oil in a second shallow dish. First, dip the okra slices into the almond milk mixture. Then, cover them with the breadcrumb mixture and press them down gently to stick. Line a baking sheet with parchment paper and put the okra slices on it. Turn the pan over every 15 minutes for 20 to 25 minutes, or until the bread is golden brown and crispy. Serve hot with the sauce of your choice.
