I made #BakedTomatoes 🍅 for #lunch today and Leila said, “This is like eating #gourmet at home, #Mom!” 👩🏻‍🍳 I told her it’s about .20¢ per egg, .55¢ per #tomato, .10¢ for cheese, .5¢ for a sprinkle of onion, plus garlic salt, pepper, #basil, and #homegrown #parsley 🌿 from her #Nanas garden (which is #priceless in our cupboard)... but basically it’s less than a dollar to make. 💁🏻‍♀️ What we actually pay people for when we go out to eat is their time, effort, and intention that’s put into the food and service. She said, “someone should pay you for this” and I couldn’t agree more... so that’s why she’s doing the dishes. Baked Tomato Feta Basil Dinner

The tomatoes, garlic and basil cold come fresh from my garden...and I’m up for that to happen as soon as they’re ripe and ready to roll which is later this summer.  Until then, I’ll have to satisfy myself with this fragrant, flavorful tomato feta dish.  This one had no leftovers - guaranteed when I fixed it this last weekend. 

4 c. flavorful tomatoes - heirloom, cherry, or fresh from your garden, chopped

2 c. feta cheese, crumbled

1/2 c. oil

dash salt/ground pepper

2 t. garlic, minced

1/2 c. basil, fresh, ribbon cut using kitchen scissors to speed process

Preheat oven to 400 degrees.  In a large baking dish, toss together all ingredients.  Bake 30 - 40 min.  Serve up immediately on a bed of steaming hot brown rice or not to save carbs - your choice.

Love baked tomatoes? Try this simple and nourishing recipe made with just a handful of ingredients. Ingredients • 6 large tomatoes 🍅🍅🍅🍅🍅🍅 • 3 t olive oil, plus more for greasing • 6 large eggs 🥚🥚🥚🥚🥚🥚 • 1 T fresh thyme, chopped • Salt and pepper, to taste Instructions 1. Preheat oven to 350°F. Grease the baking tray with olive oil and set aside. 2. Cut off the tops of the tomatoes and use a spoon to scoop out the seeds and flesh. 3. Place the tomato cups, hollow side down, onto a paper towel and let it sit for three minutes to soak up excess moisture. 4. Arrange tomatoes, hollow side up, onto the prepared baking tray. Drizzle with half a teaspoon of olive oil inside each tomato. 5. Season the inside of each tomato with salt and pepper and then bake for 12 minutes. 6. Remove from the oven and crack an egg inside each tomato cup. Bake for 15 minutes for a runny yolk or 20 minutes for a firmer yolk. 7. Remove it from the oven and let it cool for two minutes.
