Ingredients: 1 cup couscous. 2 cups cherry tomatoes, halved. 2 tablespoons olive oil. Salt and pepper to taste. 1/2 cup fresh basil leaves, chopped. 1/2 cup crumbled feta cheese. 2 tablespoons balsamic vinegar. 1 garlic clove, minced. 1/4 cup pine nuts, toasted. 1 lemon, zest and juice.
Instructions: Preheat your oven to 400F 200C. Toss the halved cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast in the preheated oven for 20-25 minutes or until they start to caramelize. While the tomatoes are roasting, prepare the couscous. In a saucepan, bring 1 cup of water to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff it with a fork. In a large bowl, combine the roasted tomatoes, chopped basil, crumbled feta cheese, and toasted pine nuts. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, balsamic vinegar, minced garlic, lemon zest, and lemon juice. Season with salt and pepper to taste. Pour the dressing over the couscous and tomato mixture in the large bowl. Toss everything together until well combined.
