[日安小廚房]巴斯克燉雞Basque Chicken
Le Pay Basque,巴斯克,除了以獨立運動屢屢登上國際新聞版面之外,這個地區獨樹一格的飲食文化也是許多歐洲老饕的美食寶地。
如果要用最粗淺的幾個字來形容巴斯克料理,大概就是融合了法國與西班牙的飲食風格,再加上別具特色的巴斯克色彩。
依山傍水的豐饒物產,使得巴斯克的街道上隨處是美食。
也是米其林銀河系中星星密度最高的地方。
今天就要來做這道《巴斯克燉雞》。
靈魂食材為紅椒、青椒、拜雍火腿(Jambon de Bayonne)、艾斯佩雷辣椒粉(Piment d'Espelette)。
通常巴斯克燉雞會使用肥美的大雞腿,考量作為隔日中餐飯盒的便利性,這次我改用了棒棒腿。
當然,也需要香草束,廚房裡沒有,就以普羅旺斯香料代替。
<食材準備 3~4人份>
雞棒棒腿-12隻
紅甜椒-1顆 去核去籽,切絲
黃甜椒-1顆 去核去籽,切絲
青椒-1顆 去核去籽,切絲
番茄-2顆 去皮,切丁
洋蔥-1顆 切絲
蒜頭-3辦 去皮
辣椒-2根 剖切
拜雍火腿-100g 以手撕成絲
普羅旺斯香料
艾斯佩雷辣椒粉
現磨黑胡椒
玫瑰岩鹽
白酒-150 cc
橄欖油
<作法>
1.橄欖油熱鍋,放入棒棒腿煎至金黃後撈起備用
2.原鍋加入洋蔥、紅甜椒、黃甜椒、青椒炒至軟化
3.加入蒜頭、辣椒、拜雍火腿拌炒
4.加入番茄拌炒
5.加入白酒,拌勻
6. 以鹽、黑胡椒、艾斯佩雷辣椒粉、普羅旺斯香料調味
7.放入棒棒腿,將蔬菜覆蓋於雞肉上
8.蓋上鍋蓋,以小火燉煮60分鐘
9.掀開鍋蓋,以中火收汁5~10分鐘
歐洲美食家都是這樣吃的,以香氣四溢的雞油香飯佐著燉雞一起享用。
廚房裡沒有雞油,就用鵝油與十穀米烹煮出健康美味的《鵝油十穀飯》。
利用燉雞的空檔,將十穀米洗淨,加入1:1的開水,再加入一匙鵝油,將米飯炊煮至熟透即可。
巴斯克燉雞非常美味!
與其他地區大多會使用西洋芹及紅蘿蔔的燉菜風味非常不同。
混和了拜雍火腿及艾斯佩雷辣椒粉的滋味,是很有個性的一道佳餚。
加了白酒,也有那麼一點點燒酒雞的概念。
也很下飯!
好吃到別說盤底,就連鍋底都想用Baguette掃乾淨!
也可以做成牛肉版本,只需將雞肉換成牛肉,白酒換成紅酒。
當然,很快的我就會做這道《巴斯克燉牛肉》。
