Every bite of this Mango Shrimp Salad is full of flavor from the juicy mangoes, the succulent shrimp, and the tangy lime dressing. It's great for a healthy, light meal.
Ingredients: 1 lb shrimp, peeled and deveined. 2 ripe mangoes, peeled and diced. 1 red bell pepper, diced. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. Juice of 2 limes. 2 tbsp olive oil. Salt and pepper to taste. Mixed greens for serving.
Instructions: In a large bowl, combine diced mangoes, red bell pepper, red onion, and chopped cilantro. In a separate bowl, whisk together lime juice, olive oil, salt, and pepper to make the dressing. Season shrimp with salt and pepper, then grill or saut until cooked through, about 2-3 minutes per side. Add cooked shrimp to the bowl with mango mixture. Pour dressing over the shrimp and mango mixture, toss to combine. Serve the mango shrimp salad over a bed of mixed greens.
