Ingredients: 1 lb 15 bean soup mix. 2 smoked ham hocks. 1 onion, diced. 2 carrots, diced. 2 celery stalks, diced. 4 cloves garlic, minced. 1 can diced tomatoes. 8 cups chicken broth. 2 bay leaves. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: Clear the beans of any dirt and water. You can soak them overnight or just for a short time. Put smoked ham hocks, diced onion, carrots, celery, minced garlic, diced tomatoes, chicken broth, bay leaves, and thyme in a large pot. The beans should already be soaked. Once the mixture starts to boil, turn down the heat. Cover and cook on low heat for two to three hours, stirring every now and then, until the beans are soft. Take the ham hocks out of the soup when the beans are soft. Take the meat out of the pot, chop it up, and then put it back in. Throw away the fat and bones. Add pepper and salt to taste. If you want, you can serve it hot and top it with chopped parsley or green onions.
