ITK: Bury me in Curry!
As a 2nd generation Vietnamese American growing up in California, it was not atypical to see the dinner table hold dishes of Chef Boyardee beef ravioli, nước chấm (fish sauce) and quesadillas. Dividing my plate into equal thirds (to make sure nothing touched), I'd cross eat the processed pillows of beef, alongside bánh bèo, while taking bites of the toasted tortilla in between. Japanese cuisine made its way into my diet due to weekend lunches with my cousins and Italian expanded from Costco pizza to Buca di Beppo on Friday nights.
Despite the growing concentration of Indian engineers and thus Indian restaurants in Silicon Valley, Indian food never made it into the consideration set of where we would dine for Friday Family Dinner. My parents couldn't handle the intense scent of toasted cumin and garam masala. They would make a face. Similar to how Americans react when they smell durian for the first time.
Hearing that chicken tikka masala was just as much the national dish as bangers and mash, I felt very self-concious before leaving to study abroad in the UK. I had no experience with the cuisine! What are you supposed to do with this bread called "naan?" Can you use your hands? I thought lassi was limited to the name of a Hollywood sheep dog...
I eventually did try Indian cuisine via lunch buffet (thanks Judy!) and didn't hesitate or flinch when I ordered my first helping of chicken tikka masala and Guinness in London (just like a local!).
But even after my experience abroad and in LA, I had very few positive experiences with Indian food :( It was often too heavy or greasy. Then I tried cooking it home. Beef Vindaloo braised for hours made tough sirloin fall apart at the sheer presence of a spoon. My tikka masala will stand up to any version you'll get at a restaurant AND with less calories. My DIY version of aloo gobi is toasted and crispy, with jusssst the right amount of caramelization and snap!
