Ingredients: 1 cup brown lentils, rinsed. 1/2 pound ground beef. 1/2 cup brown rice. 1 onion, diced. 2 carrots, diced. 2 celery stalks, diced. 3 cloves garlic, minced. 6 cups beef or vegetable broth. 1 teaspoon dried thyme. 1 teaspoon ground cumin. Salt and pepper to taste. 2 tablespoons olive oil. Fresh parsley for garnish optional.
Instructions: In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Add diced onion, carrots, celery, and garlic. Cook until vegetables are softened. Stir in lentils, brown rice, thyme, cumin, salt, and pepper. Pour in broth and bring to a boil. Reduce heat, cover, and simmer for 25-30 minutes or until lentils and rice are tender. Adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.
