A hearty and comforting soup made with tender beef, healthy barley, and fragrant vegetables that are cooked slowly in a beef broth.
Ingredients: 1 lb beef stew meat, cubed. 1 onion, diced. 3 carrots, sliced. 3 celery stalks, sliced. 3 cloves garlic, minced. 1 cup pearl barley. 6 cups beef broth. 1 14.5 oz can diced tomatoes. 2 bay leaves. 1 tsp dried thyme. Salt and pepper to taste.
Instructions: Place beef, onion, carrots, celery, garlic, barley, diced tomatoes, bay leaves, and thyme into the slow cooker. Pour beef broth over the ingredients. Season with salt and pepper to taste. Cover and cook on low for 8 hours or until beef is tender and barley is cooked through. Once done, remove bay leaves before serving. Serve hot and enjoy!
