Green Pea Soup

Ingredients:
2 cups green peas (fresh or frozen)
1 small onion (chopped)
2 garlic cloves (minced)
3 cups vegetable broth
1 tbsp olive oil
½ cup coconut milk (optional for creaminess)
Salt and pepper to taste
Fresh mint or parsley (for garnish)
Making Process:
Heat olive oil in a pot and sauté onions and garlic until soft.
Add green peas and vegetable broth. Simmer for 10 minutes.
Blend the mixture until smooth using a blender or immersion blender.
Stir in coconut milk (if using), and season with salt and pepper.
