You can taste the unique flavor of beef tongue in these sliders, along with the freshness of wild greens and the umami richness of sardines. A tasty and different take on the traditional slider.
Ingredients: 1 lb ground beef tongue. 1/4 cup wild greens such as dandelion or arugula, chopped. 1/4 cup red onion, finely diced. 2 cloves garlic, minced. 1/2 tsp salt. 1/4 tsp black pepper. 1/4 tsp paprika. 1/4 tsp cumin. 1/4 cup breadcrumbs. 1 egg. 8 small slider buns. 1/4 cup mayonnaise. 1 tbsp Dijon mustard. 8 sardine fillets, canned in olive oil. Lettuce leaves for garnish. Tomato slices for garnish. Pickles for garnish.
Instructions: Put ground beef tongue, chopped wild greens, diced red onion, minced garlic, salt, black pepper, paprika, and cumin in a large bowl. Mix the egg and breadcrumbs into the mixture until they are well mixed in. Make 8 small patties about the size of sliders out of the mixture. Set the grill or skillet over medium-high heat. Cook the patties for four to five minutes on each side, or until they are done the way you like them. It's time to make the sauce. In a small bowl, mix the mayonnaise and Dijon mustard together. In a toaster or on the grill, toast the slider buns until they are just barely browned. On the bottom half of each bun, spread the Dijon sauce and mayonnaise. Pickles, lettuce leaves, tomato slices, and a cooked patty should be put on top of each bun. Put the top half of the bun on top of the toppings, and use toothpicks to hold the sliders together.
