The Beefy Enchilada Melt is a delicious grilled cheese sandwich with a Mexican twist. It's loaded with seasoned ground beef, enchilada sauce, melted cheddar cheese, and fresh veggies, all sandwiched between crispy sourdough bread slices. It's a perfect combination of comfort food and Southwestern flavors.
Ingredients: 2 slices of sourdough bread. 2 tablespoons of butter. 1/2 cup of cooked ground beef. 1/4 cup of enchilada sauce. 1/2 cup of shredded cheddar cheese. 1/4 cup of diced onion. 1/4 cup of diced bell pepper. 1/4 cup of sliced black olives. 1/4 cup of diced tomatoes. 1/4 cup of chopped fresh cilantro. Salt and pepper to taste.
Instructions: On one side of each slice of sourdough bread, spread butter. Put one slice in a pan over medium-low heat, butter side down. Fill the skillet with a slice of bread. Add the cooked ground beef, enchilada sauce, shredded cheddar cheese, diced onion, diced bell pepper, sliced black olives, diced tomatoes, and chopped cilantro. Add pepper and salt to taste. Butter the top side of the second slice of bread and put it on top. The cheese should melt and the bread should be golden brown after 3 to 4 minutes on each side. Take it out of the pan and let it cool for one minute. Then cut it in half. Enjoy your Beefy Enchilada Melt while it's still hot!
