Surprising find of this Xinjiang Uighur Large-Pan Chicken 新疆大盤雞 at Beijing Restaurant. A whole chicken cut into pieces, sauteed with peppers, chili, potatoes, sichuan peppercorns, spices...with a rich gravy over a bed of freshly hand made "belt-shaped wide thick hand-made noodles" 皮帶麵.
