Surprising find of this Xinjiang Uighur Large-Pan Chicken 新疆大盤雞 at Beijing Restaurant. A whole chicken cut into pieces, sauteed with peppers, chili, potatoes, sichuan peppercorns, spices...with a rich gravy over a bed of freshly hand made "belt-shaped wide thick hand-made noodles" 皮帶麵. Savory, aromatic, and very hearty Uighur food. Delicious! Love it. Not on the menu. You have to ask for it. And not available all the time. Best to call to ensure that they have it.
