Two new crazy “recipes” from my insane mind.
“Bacon” burrito taco:
4 strips benevolent bacon (It’s soy bacon. Can totally use real bacon if you like, no judging here.)
1 flour tortilla
1 pre-made corn tortilla shell (IE Taco Bell or El Paso brand)
2 tablespoons Taco Bell medium nacho cheese sauce
1/4 C or more mexican cheese blend or medium shredded cheddar.
Optional: beans, tomato, sour cream, lettuce, but its good even without them!
Prepare bacon according to package directions. Let rest on paper towel to soak up oils. Get out your flour tortilla and put on your cheese blend. Microwave for 30 seconds. Put on your corn tortilla, put your bacon inside it, then slather on that there delicious nacho cheese sauce onto the bacon. (LOL) Wrap up like a burrito and put back into the microwave. Heat for 25-30 seconds or until nacho cheese melts. Enjoy!!
The laziest mexican pizza:
2 small flour tortillas
approximately 3 tablespoons ready made pizza sauce, any brand
1 veggie burger or hamburger patty (I used Morning star farms Quinoa with roasted garlic)
shredded cheese
nacho cheese (optional, but I liked it)
Optional: Olives, green onion, tomatoes for toppings, like Taco bell’s original pizza
Heat patty according to directions and set aside. Heat tortillas in microwave for 25 seconds. Put patty on tortilla and top with nacho cheese sauce if using and/or 1 tablespoon pizza sauce. Top with remaining tortilla. Top that with pizza sauce, then shredded cheese. Microwave until cheese is melted, about 30 seconds or more. Eat it.
