Cauliflower Kohlrabi Creamed Soup
That’s a mouthful and so is this madly tasty comfort food soup. It throws together quickly and is equally fabulous the next day, too. Reserve the kohlrabi tops cut into ribbons to add as bitter greens to a salad or a fry up with onions the next day.
1 - 20 oz. pkg. frozen mashed cauliflower
olive oil
2 kohlrabi, peeled, grated, reserve greens for a later dish
1 med. onion, diced
1 1/2 c.+ half and half
1 t. smokey Spanish paprika
1 t. garlic powder
dash salt/pepper
Defrost cauliflower in the microwave according to the package directions. In a large deep fry pan, saute onions and kohlrabi until tender. Add defrosted cauliflower, half and half, and seasonings. Simmer 15 min. until flavors are blended.
