Spring Vegetable Crustless Quiche
Cut back on carbs but still enjoy a hearty, filling quiche...go crustless. This throws together quickly, is hearty, and will be a new family favorite...economical too. The Knorr Spring Vegetable mix is on the shelf in the soup aisle when you’re shopping. Use kale or spinach or chard or mustard greens or whatever greens - fresh or frozen you’re inspired to use. Give this a whirl and see what you think...
4 eggs, whisked
1 1/2 c. milk
1 - .9 oz. envelope Knorr Spring Vegetable mix
2 c. wiltable greens, chopped into ribbons
1 c. shredded feta or Swiss or Gouda cheese
Preheat oven to 350 degrees. Grease a deep baking dish. In a mixing bowl, stir together eggs, milk and Spring vegetable mix seasoning, set aside. In the baking dish, layer greens then the cheese. Pour the liquid eggs/milk/veg mix over all covering contents. Slip this into the oven baking for 50 min. or so until a knife blade placed into the center comes out clean. Serve with a crisp green salad and melon chunks on the side - mmmmmm.
