I scream. You Scream. We all scream for ICE CREAM! SO for Graduation//Christmas my family got me an ice cream maker, which is a DREAM come true! I love ice cream, but I hate that my all time (dairy free) ice cream is like $7 FOR A LITTLE PINT! -So Delicious (yes that is the brand): Mint Chocolate Chip *sigh* AND even my favorite (cream da la cream) ice cream (Graeters: Mocha Chocolate Chip), packed full of sugar and dairy is still like $5 for a pint. Side Note: Graeters is a Kentucky Local Ice cream, made with love and badassery- Much like Kentucky in general, it is a heaven kind of thing. ANYWAY Since I hate spending money, and I have this handy new gadget to play with- Oyster Ice cream Maker: $35 at Target (you can get it in PINK! EEEPP!) My first Ice cream experiment: Dairy Free Chocolate Chip Espresso! ALL THE NOMS! So to PREPARE your Ice cream maker, take out the bowl and freeze it, it says at least 8 hours, but the longer the better! This also gives you the time to prepare your ice cream base, which takes 5 minutes, but it needs to chill out in the fridge for a day. Ingredients: Unsweetened Coconut Milk (You'll be using 3.5 cups- one carton has about 8) 2 t Vanilla extract 1/2 C Honey 8 T Espresso (Brewed) - I used instant espresso (that I brewed) and it was awesome CHOCOLATE CHIPS!- I used Enjoy Life, because they're dairy free, delicious and they have less sugar than any other brand. How to make it: Mix all your ingredients (except the chocolate chips) in a sauce pan, bring to a boil and then let simmer for 3-5 minutes. Chill in the fridge for a day or so Once that is done, assemble your ice cream maker and turn on, pour your mixture into the bowl and add the chocolate chips. Let the ice cream maker do its magic for about 30-40 minutes. Scoops and enjoy! xoxo Breeze.
