Ingredients: 1 lb boneless, skinless chicken breasts, cubed. 4 cups chicken broth. 1 cup diced tomatoes. 1/2 cup diced onion. 2 cloves garlic, minced. 1 jalapeno, seeded and diced. 1 teaspoon chili powder. 1 teaspoon cumin. 1/2 teaspoon paprika. Salt and pepper to taste. 1/4 cup chopped cilantro. 1 avocado, diced. 1/4 cup shredded cheddar cheese optional.
Instructions: Put diced tomatoes, onion, garlic, jalapeo, chili powder, cumin, paprika, salt, and pepper in a slow cooker. Add the chicken and chicken broth. Turn the heat to low and cover. Cook for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is done and the flavors have mixed. Cut up some cilantro and stir it in before serving. If you want, you can serve it hot with diced avocado and shredded cheddar cheese on top.
